What makes it special
The peri peri rub is the same one we use on our fries, but applied to paneer it does something different. The yogurt in the paneer marinade tones down the burn just enough, while the rub gives you the kick on every bite. It's hot, not painful. Most spice-lovers say it's a perfect six out of ten.

Sesame bun, grilled paneer slab with peri peri rub, lettuce, tomato, onion, mint chutney, and a light cooling spread. No mayo bomb here because we want the spice to come through.

+How spicy is the peri peri seasoning?
Medium to hot. It has dried red chilli, paprika, garlic, vinegar powder, and oregano. Stronger than chilli garlic fries, milder than ghost pepper anything.
+Can you make this less spicy?
We can do a half-rub version. Ask for 'light peri peri' at the counter. It cuts the heat by about forty percent.
+Is this gluten-free?
No. The bun has wheat. The paneer and seasoning are gluten-free but the bread is not. We don't have a gluten-free bun option yet.
