What makes it special
Paneer in a burger format is harder to do than it sounds. The paneer needs to hold its shape and not turn rubbery. We marinate ours in a yogurt and spice mix for a few hours before grilling, which keeps it soft inside while the outside picks up colour from the grill. It's a real paneer slab, not a paneer-flavored patty.

Fresh. We get paneer delivered daily and use it the same day. Anything not used by closing time gets prepped for the next day's marinades.

Light to medium. The marinade has yogurt, ginger garlic, coriander, and a pinch of red chilli. Most kids eat this without issues.
