What makes it special
It's the small change that makes the bigger difference. Melted cheese over a freshly fried aloo tikki adds richness you don't get from the Classic alone. We use a real cheese slice, not processed spread. The cheese is placed on the patty straight after frying so it melts from the heat below before the bun goes on.
