What makes it special
The gravy is the difference. We cook it slow with caramelised onion, fresh ginger garlic paste, and a touch of brown sugar, then finish with chilli oil. It has heat, but it also has depth. The momos hold up because they go into the gravy at the last second, not stewed.

Medium-hot. Spicier than the steam momos, milder than the peri peri variant. If you want it mild, ask for half spice and we will adjust.

It is rich but not cream-heavy. The base is onion and tomato, no dairy. Light enough to eat the whole plate solo.
